Craft & ingredients

Nothing here is done quickly.

Coffee, pâtisserie and a short list of materials — the three things we would rather do properly than widely.

01

Roasted a few suburbs away

Our blend is roasted in small batches twenty minutes from the door, then rested before it reaches the bar. We taste it weekly and adjust the recipe when the season asks, rather than chasing a fixed number on a bag.

02

Laminated by hand, over three days

Butter is beaten into the dough, folded, and rested overnight — three times. It is the slowest thing we do and the reason the pastry shatters instead of bending. Four things done properly, rather than twenty adequately.

03

Weighed, timed, tasted

Every dose is weighed, every shot timed, and the grinder adjusted through the day as the room warms. It is the least glamorous part of a serious café, and the reason the last cup tastes like the first.
